Blueberry Tart Recipe

As the last warm days of summer pass by, the most delicious berries sweeten the transition into autumn. Blueberries are my favourite snacks at the moment, so I decided to bake this quick and easy blueberry tart. The balance between sweet and sour was delightful and the deep berry colours made it all the more appetising. And let me tell you, it didn’t last long!

Let’s celebrate the end of summer with this heavenly blueberry tart!

Ingredients

Crust
  • 300g (3 cups) spelt flower
  • 1 tsp baking powder
  • 150g (2/3 cup) butter
  • 100 g (0.5 cup) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 pinch of salt
Filling
  • 200g (7/8 cup) crème fraîche
  • 50g (¼ cup) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 500g (5 cups) blueberries

Step 1

Preheat the oven to 200° C (375° Fahrenheit). Wash and dry the blueberries.

Step 2

Combine all the ingredients for the dough and mix until smooth. Press the dough onto the bottom of a greased springform pan and up the sides.

Step 3

For the filling, combine the crème fraîche, sugar and vanilla extract, whisk until smooth and fold in about 2/3 of the blueberries.

Step 4

Pour the filling onto the dough and smooth the top. Place the remaining 1/3 of your blueberries on top of the filling and press them in gently.

Step 5

Bake for about 30 minutes until the crust has turned golden and let it cool completely.
